Cold smoked a Chuckeye steak for 2 hrs then gave it a reverse sear. If you've never heard of a Chuckeye, a Chuckeye is also known as a poor man's ribeye. It's cut from very close to the cow from where the Ribeye comes from. You get the tenderness of a ribeye with less marbling and here it's about half the cost
